Potato Recipes

Potatoes seem to be the longest lasting of winter storage crops in my experience. Of course, that depends on your conditions. Nevertheless, it is a great time to sort through your potatoes and pull out any that have mars, or scars or spots starting to grow. And, here are some recipes for you to try out.

Hash Browns

We eat these every Sunday until our potatoes are gone. Maybe not the quickest of dishes, but delicious for breakfast, lunch or dinner. Russets preferred, but any potato will be good. Times are not included since type potato, skillet and range can influence outcome.

Grated potatoes, 1 medium per person

Minced garlic, 1 clove per person

Chopped onion, 1/2 medium per person

Olive oil

Butter

Salt & Pepper to taste

Grate your potatoes on a cotton kitchen towel, wring out well. Warning this, may stain your towel.

Add garlic and onions.

Heat olive oil in cast iron skillet, just enough to evenly cover the bottom of the skillet. Medium high heat.

Spread potato mixture evenly. You do not want it too thick, the more air space the crunchier your hash browns. Lower temperature to Medium low. Monitor to make sure the potatoes do not burn, lower the temperature if needed. Once the hash browns are browned to your preference on the bottom, flip. Add butter, about 1 teaspoon, divided into a few pats and evenly distributed. Lower heat to low. Monitor. Once your hash browns are crispy on both sides then they are done. Note: if the middle is raw then there were too many potatoes in the pan. Enjoy! Breakfast, lunch, dinner.

Simple Baked Potatoes

We all know how to bake a potato. But, did you know that it can be this simple?

Preheat oven to 350 F

Stainless steel skewers

Russet potatoes, washed, dried and all nicks cut off.

Skewer your potatoes evenly, with a spot of space between each potato. No oil, no seasoning, no foil, nothing else. Place in oven for about 40 minutes. Test with fork piercing.

Once done you can make twice baked potatoes, mashed potatoes or cool your potatoes for other uses. Potato salad, slice and sauté with onions, or reheat for lunch. Potatoes are a healthy food option, it just depends upon how you dress them up! I have been known to simply eat a cooled baked potato like an apple (with a dash of salt and pepper).
