Winter Squash

Winter Squash, I like it. I cannot really say that I love it though. For those of you in my camp, you will probably agree that almost all uses of winter squash are a variation on the theme of roasted or soup. So, I have been searching for innovative uses of winter squash. Hopefully these inspire you to creatively use up the remaining squash in your root cellar. 

 

SAVORY WINTER SQUASH BREAD PUDDING

Saute, until translucent:

3 tablespoons butter

2 cups diced onions

1 teaspoon salt

1/2 teaspoon cayenne

Add:

2 tablespoons minced garlic, saute for about 2 minutes

 

Preheat oven to 350 F

 

 

 

Mix into above ingredients, bring to boil, immediately reduce heat and simmer for 10 minutes:

3 1/2 cups whole milk

4 cups peeled and cubed winter squash (other than spaghetti squash)

2 teaspoons chopped fresh sage

 

Temper your eggs. This allows for mixing into hot temperatures without 'scrambling' the eggs.

Crack 3 large eggs into a small bowl, slowly add some of the hot milk and mix well. Return eggs to milk/squash mixture and turn off heat. 

 

Cube 8 cups of French bread

Shred 1 1/2 cups of pecorino cheese

 

Place bread in a greased baking dish, top with 1/2 cup of cheese. Pour milk/squash mixture over, ensure that bread in submerged into liquid by gently pushing down. Add 1 cup of cheese. 

Cover and bake for one hour. Allow to rest for 20 minutes before serving. 

 

 

ROASTED SQUASH PUREE:

 

Roasting a whole squash takes about 1 hour in an oven at 400 F. You know it is done when a fork can easily

pierce in a few places.Cool and scoop out flesh. Puree. Freeze in 1/2 cup increments (or to fit your needs).

 

Here are delicious ways to use your roasted squash puree: Add to cornbread batter before baking for extra

moisture and flavor, add to risotto while cooking, add to polenta while cooking, add to muffin mixtures, add to pancake batter, add to smoothies, spread on pizza dough in place of sauce or warm with butter and seasonings to serve as a side dish. 

 

 

 

RIBBONS OF RAW SQUASH

 

 

This is one of my favorite uses of squash. Raw and peeled in graceful ribbons with a vegetable peeler. You can add to the top of salads, use in omelets, top dress stews, add to sandwiches and place on top of pizza before cooking or after. Raw winter squash is delicious!

 

In addition, you can grate winter squash and combine with potatoes, carrots, beets to make fritters. Or you can make winter squash chips.
